About the Course

What is matter, why does it matter, and how does it change? Discover the role that chemistry plays in our everyday lives, particularly in the kitchen. In this six-week course, through hands-on investigations and discussions, we'll learn about the states of matter, explore different types of mixtures (and make your own!), distinguish between physical and chemical changes, and learn about subatomic particles. Witness enzyme action and learn about fermentation and food preservation with related at-home labs. We'll also review the properties of water and learn about solutions and supersaturated solutions. The course culminates in a final project that allows you to demonstrate your new knowledge of kitchen chemistry. Time commitment: 2.5-3.5 hours per week (1.5 hours of class time, 1-2 hours of independent work). Course will include 6 sessions over 6 weeks. Course Overview Learning Objectives: Describe the states of matter and explain their phase changes Explain the basic concepts of mixtures and how they can be separated Differentiate between occurrences of physical changes and chemical changes Explain the structure of atoms including the charge, mass, and locations of subatomic particles Identify the properties of macromolecules and their importance for the human body Describe and provide examples of fermentation and food preservation Explore the unique properties of water, why it is essential for life, and its importance in chemical reactions About Advanced Enrichment Courses These courses offer above-grade-level material presented in a novel context, explored with other advanced learners, and guided by a CTY educator and help prepare students for higher-order thinking and college-style academic challenges. The content in Kitchen Chemistry overlaps with the CTY course Household Chemistry. Students who have already taken Household Chemistry may wish to consult with an enrollment advisor before selecting this course.
